One of the things I love about this single serve chocolate chip cookie recipe is that it makes just one cookie. I don’t have to worry about a whole batch sitting in the pantry, calling my name every time I walk through the kitchen!
And I can still enjoy a warm, homemade chocolate chip cookie without giving up on my weight loss goals. The portion slider makes it easy to adjust the recipe to fit my calorie budget.
There’s even a little bonus for Peaches. Since the recipe only calls for one tablespoon of whisked egg, she gets the leftover egg, cooked of course!
One homemade treat without a whole batch waiting in the pantry!

Instructions
Preheat oven to 350°F. Barely melt the butter.
Stir together butter, brown sugar, salt, whisked egg, vanilla, flour, and baking soda until combined.
Mix three-quarters of the chocolate chips into the dough.
Line a baking sheet with parchment paper. Shape a full-size batch into a cookie about 3½ inches across. Shape other batches as desired.
Press the remaining chocolate chips over the top and sides.
Bake the original full-size cookie for 12–14 minutes, until golden. Smaller or larger batches may need different baking times. Cool on a wire rack or enjoy warm.
Tiny egg and baking soda amounts can be difficult to measure. For the ¼ or ½ version, consider making the full dough, dividing it, and chilling or freezing the rest.
